Turns out you can fight in category even if you are not in the weight range as the wiki shows and as the real life MMA organizations like UFC works. http://www.mmatycoon.info/index.php?title=Weight_classes There you can see that you need to be in the range of that weight to fight in the weight but in the game it doesnt work like that. http://www.mmatycoon.com/fighterprofilepublic.php?FID=166703 This guy who is only 170 fights in 205. http://mmatycoon.com/fighterprofilepublic.php?FID=210437 This guy is 139 but his next fight is in 155.
