If you wanted to talk specifically about a fighter's punching, you'd use the term "boxing" instead (or just "punching"). In MMA Tycoon, according to the Wiki, Striking Defense applies "both standing and in the clinch." If you're trying to defend against kicks in particular, you want to train Striking Defense and evaluate how you're using your tactics sliders.
